    Recently I've tried your Country Brown recipe three times. Thank you so much for sharing that amazing recipe. It's really flavoury and tasty. As a beginner of sourdough baker, may I consult you some questions about the gluten?
    During the fermentation my dough was really sticky and rough on the surface, even after a fourth s&f. The more s&f in one turn, the rougher the dough turned to be. So I stopped. But it was still sticky and batter-like after fermentation.
    Would you please help me? I feel grateful that you spent so much time and patience in reading my message. And, reaaaaaally couldn't wait to see your book!🙏
